Instant Pot Kale

You guys! This is the EASIEST and BEST way to cook your kale… or any other leafy greens for that matter. Check out that BRIGHT GREEN color! We’ve all cooked kale (or collards) on the stovetop, only to have them turn that yucky army green color, and get all limp and unhappy, right? Well, no more! Instant Pot to the rescue. AGAIN!

This can barely be called a recipe. It’s more of a method. So here goes…

  • Chop you greens into bite-sized pieces. Place a steamer basket into your Instant Pot. Add one cups of water. Cover and seal the the vent.

  • Cook on high for 2 minutes.

  • Do a QUICK release. This means you will have a LOT of steam to deal with so be prepared and be careful.

That. Is. It.

You will now have fluffy, tender, bright green kale that you can use however you like. I add mine to soups (at the last minute of course—you don’t want to cook it much longer). Drizzle you r favorite oil-free salad dressing or just give it a squirt of lemon or lime. Makes a great side dish!

Don’t forget, it’s always good to have some healthy fats with your greens to increase the absorption of those nutrients. A nut based dressing, a sprinkle of hemp seeds or a few walnuts on the side would be great.
